Brown Sugar Blueberry Cobbler

Cobblers are a favorite dessert of the south and this is the easiest and tastiest cobblers I have ever tried to make! I found this original recipe right here but I changed it just a tad.  I love fruit but when eating a cobbler, the crust is my favorite part and this crust is amazing!!! 

All you need is:
3 cups blueberries, fresh or frozen
1/2 cup sugar
1 box yellow cake mix
1/2 cup butter and a tad to melt on top
A pinch of brown sugar

Preheat your oven to 350 degrees.

Spray your baking dish with nonstick spray.  I usually use a 9x11 or 9x13 dish.

Mix your 3 cups of blueberries with 1/2 a cup of sugar and pour that into your baking dish.

Brown 1/2 cup of butter (1stick) in a saucepan over the stove and then whisk it together with you box of yellow cake mix.  

Crumble the mix and butter over the blueberries and then sprinkle with brown sugar.   Bake for 20 minutes and then add a little bit of melted butter to the top.  Bake for another 20 minutes until brown and bubbly.

Serve fresh out of the oven with vanilla bean ice cream or if you are lucky enough to live near a Jeni's, their brown butter almond brittle ice cream is delightful!
